Ingredients

  • 2 Medium zucchini, diced
  • 1 cup Corn (fresh, frozen or canned)
  • 2 Medium tomatoes, diced
  • 1 tablespoon Olive oil
  • 1 clove Garlic, minced
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)


Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Add diced zucchini and corn to the skillet, and cook for about 5 minutes, stirring occasionally.
  4. Add diced tomatoes, salt, and pepper; cook for an additional 3-4 minutes until the vegetables are tender.
