Ingredients
- 1/2 cup Unsalted Butter (room temperature)
- 1 cup All-Purpose Flour
- 1/4 cup Powdered Sugar
- 1/2 cup Lemon Juice (from 2-3 lemons)
- 1 tbsp Lemon Zest (finely grated)
- 3 Large Eggs (room temperature)
- 1 1/2 cups Granulated Sugar
- 1/2 cup All-Purpose Flour (sifted)
- As needed Powdered Sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- Cream together the softened butter and powdered sugar until light and fluffy. Gradually add 1 cup of all-purpose flour while mixing until just combined. Pour the mixture into your prepared baking pan and press it evenly to form the crust.
- Bake the crust in the preheated oven for 15-20 minutes until lightly golden, then cool slightly.
- Whisk together the eggs and granulated sugar until well combined. Add the lemon juice and lemon zest, then slowly mix in the sifted flour.
- Pour the lemon mixture over the pre-baked crust and spread it evenly.
- Bake for an additional 20-25 minutes, or until the filling is set with a slight jiggle in the center. Allow it to cool completely before slicing into squares.
- Dust with powdered sugar and serve chilled.
