Ingredients
- 1 lb Boneless, skinless chicken thighs
- 1 Tbsp Lime juice
- 2 Tbsp Avocado oil
- 1 Tbsp Chili powder
- 1 tsp Cumin powder
- 1 tsp Garlic powder
- 1 tsp Salt
- 1 tsp Black pepper
- 2 cups Sweet corn kernels
- 1 small Red onion, thinly sliced
- 1 cup Sour cream
- 1 Tbsp Mayonnaise
- 1/2 cup Cotija cheese
- 1 whole Lime
- Salt & pepper to taste
- 3 cups Cooked rice
- 1/4 cup Fresh cilantro
- Lime wedges for serving
Instructions
- Prepare the Chicken: In a bowl, mix lime juice, avocado oil, chili powder, cumin, garlic powder, salt, and black pepper. Add the chicken thighs and coat them evenly. Let them marinate for at least 10 minutes.
- Cook the Corn: Grill fresh corn until charred or sauté frozen corn in a pan until heated through.
- Sear the Chicken: Heat a skillet over medium-high and sear marinated chicken for 5-7 minutes on each side until fully cooked. Let rest before slicing.
- Assemble the Bowl: In bowls, layer cooked rice, sliced chicken, grilled corn, and red onion. Drizzle with a sour cream and mayonnaise mix, sprinkle with Cotija cheese, and garnish with cilantro.
- Serve: Squeeze fresh lime over the top and adjust seasonings to taste. Serve immediately.
Notes
For extra flavor, let the chicken marinate longer and consider serving with a side salad for a complete meal.
