Ingredients
- 1 lb Boneless, skinless chicken thighs
- 1 Tbsp Lime juice
- 2 Tbsp Avocado oil
- 1 Tbsp Chili powder
- 1 tsp Cumin powder
- 1 tsp Garlic powder
- 1 tsp Salt
- 1 tsp Black pepper
- 2 cups Sweet corn kernels
- 1 small Red onion, thinly sliced
- 1 cup Sour cream
- 1 Tbsp Mayonnaise
- 1/2 cup Cotija cheese
- 1 whole Lime
- Salt & pepper to taste
- 3 cups Cooked rice
- 1/4 cup Fresh cilantro
- 1 lime, wedges
Instructions
- Prepare the Chicken: In a bowl, mix lime juice, avocado oil, chili powder, cumin, garlic powder, salt, and black pepper. Add the chicken thighs and coat them evenly. Let them marinate for at least 10 minutes for maximum flavor.
- Cook the Corn: If using fresh corn, grill it until it’s nicely charred. If you’re using frozen corn, sauté it in a pan with a little oil until heated through and slightly browned.
- Sear the Chicken: Heat a skillet over medium-high heat. Add a little oil, then sear the marinated chicken for about 5-7 minutes on each side or until fully cooked. Ideally, the internal temperature should reach 165°F (74°C). Remove and let rest for a few minutes before slicing.
- Assemble the Bowl: In bowls, layer the cooked rice first, followed by sliced chicken, grilled corn, and red onion. Drizzle sour cream and mayonnaise mix over the top. Sprinkle with Cotija cheese and garnish with cilantro.
- Serve: Finish with a squeeze of fresh lime and add additional seasonings to taste. Serve immediately and enjoy!
