Description
Delicious vanilla cupcakes filled with fresh strawberries and topped with whipped cream.
Ingredients
- 1 1/2 cups All-purpose flour
- 1 cup Granulated sugar
- 1/2 cup Unsalted butter, softened
- 2 Large eggs
- 1/2 cup Milk
- 2 teaspoons Vanilla extract
- 1 1/2 teaspoons Baking powder
- 1/4 teaspoon Salt
- 1 cup Strawberries, hulled and chopped
- 1/4 cup Strawberry jam
- 1 cup Heavy whipping cream
- 2 tablespoons Powdered sugar
- Fresh strawberries for topping
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- Cream together the butter and sugar until light and fluffy.
- Add eggs and vanilla, mixing well.
- Whisk together flour, baking powder, and salt in a separate bowl. Gradually add dry ingredients to the butter mixture, alternating with milk, until just combined.
- Divide the batter into the cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Allow to cool completely, then use a knife to create a small well in the center of each cupcake.
- Mix chopped strawberries with strawberry jam and fill the wells with the mixture.
- Whip the heavy cream with powdered sugar until stiff peaks form.
- Frost the cupcakes with whipped cream and garnish with fresh strawberries.
Notes
Use fresh strawberries for the best flavor. Make sure your ingredients are at room temperature for a creamy batter.
