A delightful combination of creamy cheesecake layered with fresh strawberries and topped with a buttery crumble.
Ingredients
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup sugar
- 1 tsp vanilla extract
- 3 large eggs
- 2 cups fresh strawberries, hulled and sliced
- 1 cup sour cream
- ¾ cup brown sugar
- 1 cup all-purpose flour
- 1 tsp cinnamon
- ½ cup oatmeal
- Pinch of salt
Instructions
- Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
- Mix the graham cracker crumbs and melted butter together until combined and press into the bottom of the pan.
- Beat the cream cheese until smooth in a large mixing bowl. Add sugar and vanilla, mixing until combined.
- Add eggs one at a time, beating well after each addition. Mix in sour cream until smooth.
- Pour half of the cheesecake batter onto the crust. Layer the sliced strawberries on top, then add the remaining cheesecake batter.
- Mix brown sugar, flour, oatmeal, cinnamon, and salt in another bowl. Add melted butter and mix until crumbly. Sprinkle over the cheesecake layer.
- Bake for 55-65 minutes or until firm. Let it cool, then refrigerate for at least 4 hours, preferably overnight.
- Serve chilled and enjoy the combination of creamy cheesecake and fruity strawberry flavor with a crunchy topping.
Notes
Use fresh strawberries for the best flavor. Let cream cheese soften at room temperature for a smoother batter.
