Description

A delicious dessert that combines creamy cheesecake with fresh strawberries and a crunchy crumble, perfect for any occasion.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 2 cups fresh strawberries, hulled and sliced
  • 1 cup sour cream
  • ¾ cup brown sugar
  • 1 cup all-purpose flour
  • 1 tsp cinnamon
  • ½ cup oatmeal
  • 1 pinch of salt


Instructions

  1. Preheat the oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. Mix the graham cracker crumbs and melted butter together until combined and press into the bottom of the pan.
  3. Beat the cream cheese until smooth in a large mixing bowl. Add sugar and vanilla, mixing until combined.
  4. Add eggs one at a time, beating well after each addition. Mix in sour cream and ensure smooth.
  5. Pour half of the cheesecake batter onto the crust, layer the sliced strawberries on top, then add the remaining cheesecake batter.
  6. Mix brown sugar, flour, oatmeal, cinnamon, and salt in another bowl. Add melted butter and mix until crumbly. Sprinkle this over the cheesecake layer.
  7. Bake for 55-65 minutes or until firm. Let cool, then refrigerate for at least 4 hours, preferably overnight.
  8. Serve chilled and enjoy!

Notes

Serve with extra fresh strawberries or a drizzle of homemade strawberry sauce.
