Description

A beautiful celebration cake combining fluffy vanilla layers with fresh berries, ideal for summer gatherings.


Ingredients

  • 2 2/3 cups cake flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 2/3 cups granulated sugar
  • 3/4 cup butter, softened
  • 3 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 cup milk
  • 2 1/2 cups heavy whipping cream, chilled
  • 4 tablespoons powdered sugar
  • 1/2 pint fresh blueberries, washed
  • 2 pints fresh strawberries, washed, hulled, and halved


Instructions

  1. Preheat the oven to 375°F. Grease and flour a 13×9-inch baking pan and line the bottom with parchment paper.
  2. Mix together the cake flour, baking powder, and salt in a small bowl.
  3. Beat together the granulated sugar and softened butter until light and fluffy, about 3-5 minutes.
  4. Add the eggs one at a time, mixing well after each addition, and then mix in the vanilla.
  5. Gradually add the flour mixture and milk alternately, starting and ending with the flour, mixing on low until just combined.
  6. Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick comes out clean.
  7. Allow the cake to cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
  8. Beat the chilled heavy cream and powdered sugar in a separate bowl until soft peaks form.
  9. Spread the whipped cream over the cooled cake, decorating generously with blueberries and strawberries.
  10. Chill the cake until ready to serve.

Notes

For better results, ensure all ingredients are at room temperature before starting. Decorate with additional fresh berries for a festive touch.
