Description

A delightful twist on traditional spanakopita featuring a buttery, flaky dough filled with savory spinach and creamy feta cheese. Perfect for appetizers, brunch, or snacks.


Ingredients

  • 2 cups All-purpose flour
  • 1 cup Butter, chilled and diced
  • 2 cups Fresh spinach, chopped
  • 1 cup Feta cheese, crumbled
  • 2 Eggs, beaten
  • 2 cloves Garlic, minced
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tbsp Olive oil, for sautéing
  • Optional: Sesame seeds, for garnish


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat the olive oil in a skillet over medium heat, add garlic and sauté for 1 minute until fragrant.
  3. Add chopped spinach and cook until wilted, then remove from heat to cool slightly.
  4. Combine flour and salt in a bowl, then gradually incorporate diced butter until the mixture resembles coarse crumbs.
  5. Add beaten eggs and mix until a dough forms.
  6. Mix wilted spinach, crumbled feta, and black pepper in a separate bowl.
  7. Roll out the dough on a floured surface to about 1/8-inch thickness, cut into squares, and place a spoonful of filling in the center.
  8. Fold over to create a pocket, sealing edges with a fork.
  9. Bake for 20-25 minutes until golden brown.

Notes

Chill the dough for 30 minutes before rolling for a flakier texture. Use fresh ingredients for the best flavor.
