Description

Ingredients

  • 1 1/4 cups All-purpose flour
  • 1/4 teaspoon Salt
  • 1/2 cup Cold unsalted butter, cubed
  • 1/4 cup Ice water
  • 6 Medium peaches, peeled, pitted, and sliced
  • 1/4 cup Granulated sugar, plus more for sprinkling
  • 1 tablespoon Cornstarch
  • 1 teaspoon Lemon juice
  • 1/4 teaspoon Ground cinnamon
  • 1 Egg, beaten (for egg wash)


Instructions

  1. Make the Dough: In a large bowl, whisk together the flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add the ice water and mix until the dough just comes together. Form into a disc, wrap in plastic, and refrigerate for 30 minutes.
  2. Prepare the Peaches: In a bowl, combine sliced peaches, sugar, cornstarch, lemon juice, and cinnamon. Toss gently and set aside.
  3. Assemble the Galette: On a floured surface, roll out the chilled dough into a 12-inch circle. Transfer to a baking sheet lined with parchment. Arrange the peach mixture in the center, leaving a 1 1/2-inch border. Fold the edges over the peaches and brush with the beaten egg, then sprinkle with sugar.
  4. Bake: Bake in a preheated oven at 375°F for 40-50 minutes until the crust is golden brown and the peaches are tender. Let cool slightly before serving.
