Description

Delicious peach hand pies filled with fresh peaches, sugar, lemon juice, and cinnamon, wrapped in a flaky crust.


Ingredients

  • 2 cups Fresh peaches, peeled and diced
  • 1/2 cup Sugar
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Cinnamon
  • 1 package Pie crusts (store-bought or homemade)
  • 1 Egg (for egg wash)
  • As needed Vanilla ice cream (optional, for serving)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the diced peaches, sugar, lemon juice, and cinnamon in a bowl. Mix well to make the filling.
  3. Roll out the pie crust on a floured surface and cut into circles (about 4-5 inches in diameter).
  4. Place a tablespoon of the peach filling on one half of each circle.
  5. Fold the dough over to create a half-moon shape and pinch the edges to seal.
  6. Place the pies on a baking sheet lined with parchment paper.
  7. Beat the egg and brush it over the tops of the pies for a golden finish.
  8. Bake for 20-25 minutes or until golden brown.
  9. Serve warm, ideally with a scoop of vanilla ice cream.

Notes

For best results, use fresh peaches and ensure the crust is properly chilled before rolling.
