Description

A delightful dish that celebrates vibrant flavors of fresh vegetables and pasta, complemented by a creamy sauce.

Ingredients

  • 8 oz penne pasta
  • 2 tbsp olive oil
  • 1 cup broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook the penne pasta according to package instructions; drain and set aside.
  2. Heat olive oil in a large skillet over medium heat; add broccoli, bell peppers, zucchini, and cherry tomatoes. Sauté until the vegetables are tender, about 5-7 minutes.
  3. Reduce heat, then stir in the heavy cream, basil, garlic powder, salt, and pepper.
  4. Mix in the cooked pasta until well combined.
  5. Serve hot, topped with grated Parmesan cheese.

Notes

For a lighter option, substitute heavy cream with a plant-based cream or unsweetened nut milk. Adjust seasonings to taste.
