Refreshing lemon cheesecake bars with a creamy filling and crunchy graham cracker crust, perfect for summer days.
Ingredients
- 8 oz Cream cheese
- 1 cup Powdered sugar
- 1 teaspoon Vanilla extract
- 1 cup Heavy whipping cream
- 1 cup Lemon curd
- 1 cup Graham cracker crumbs
- 1/2 cup Unsalted butter, melted
- 1/4 cup Granulated sugar
Instructions
- Combine graham cracker crumbs, melted butter, and granulated sugar in a mixing bowl. Press the mixture into the bottom of a greased 9×9 inch baking dish to form the crust.
- Beat the cream cheese in a separate bowl until smooth. Gradually add powdered sugar and vanilla extract, mixing until well combined.
- Whip the heavy cream in another bowl until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
- Spread the cream cheese mixture evenly over the crust, then pour the lemon curd on top.
- Refrigerate for at least 240 minutes or until set.
- Cut into bars and serve chilled.
Notes
Letting the bars set properly helps them hold shape. Use room temperature cream cheese for easier mixing.
