Ingredients
- 1 cup All-purpose flour
- 1 cup Granulated sugar
- 1/2 cup Unsalted butter, softened
- 2 Large eggs
- 1/4 cup Freshly squeezed lemon juice
- Zest of one lemon
- 1/4 cup All-purpose flour
- Powdered sugar for dusting as desired
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan or line it with parchment paper.
- Combine 1 cup of all-purpose flour, 1/2 cup of granulated sugar, and 1/2 cup of softened unsalted butter in a mixing bowl until it resembles coarse crumbs.
- Press the mixture evenly into the bottom of the prepared baking pan to form a crust. Bake for 15-20 minutes until lightly golden.
- Whisk together 1 cup of sugar, 2 eggs, 1/4 cup of lemon juice, and zest of one lemon in a separate bowl. Gradually add in 1/4 cup of all-purpose flour and mix until smooth.
- Pour the lemon filling over the hot crust once it is done. Bake for an additional 20-25 minutes until the filling is set and edges are slightly puffed.
- Cool the bars in the pan for at least 30 minutes before transferring them to the refrigerator to chill for 2 hours.
- Dust with powdered sugar, slice into squares, and enjoy.
Notes
Use fresh lemon juice for better flavor and cool the bars before cutting to prevent them from falling apart.
