Description
Lemon crumb bars combine a buttery crumb crust with a bright and tangy lemon filling, perfect for any occasion.
Ingredients
- 1 cup All-purpose flour
- 1/2 cup Granulated sugar
- 1/2 cup Unsalted butter, softened
- 1 cup Granulated sugar
- 2 Large eggs
- 1/4 cup Freshly squeezed lemon juice
- Zest of one lemon
- 1/4 cup All-purpose flour (for filling)
- Powdered sugar for dusting (as desired)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×9-inch baking pan or line it with parchment paper.
- Combine 1 cup of all-purpose flour, 1/2 cup of granulated sugar, and 1/2 cup of softened butter in a mixing bowl, mixing until it resembles coarse crumbs.
- Press the mixture evenly into the bottom of the prepared pan and bake for 15-20 minutes, until lightly golden.
- Whisk together 1 cup of granulated sugar, 2 large eggs, 1/4 cup of freshly squeezed lemon juice, and the zest of one lemon in a separate bowl.
- Gradually add in 1/4 cup of all-purpose flour, mixing until smooth.
- Pour the lemon filling over the hot crust and bake for an additional 20-25 minutes, until the filling is set.
- Let the bars cool in the pan on a wire rack for at least 30 minutes, then transfer to the refrigerator to chill for 2 hours.
- Dust with powdered sugar, slice into squares, and enjoy!
