Ingredients

  • 1 ½ cups graham cracker crumbs
  • â…“ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • Zest of 2 lemons
  • ¼ cup fresh lemon juice
  • Powdered sugar for dusting
  • Lemon zest for garnish


Instructions

  1. Prepare the crust: Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press this mixture into a lined baking pan for an even base. Bake at 350°F (175°C) for 8–10 minutes until lightly golden and cool slightly.
  2. Make the filling: In a large bowl, beat the softened cream cheese and sugar together until smooth and fluffy. Add the eggs, flour, lemon zest, and lemon juice, mixing gently until well combined.
  3. Pour the lemon filling over the cooled crust, spreading evenly. Bake for 25–30 minutes until the edges are set but the center remains slightly jiggly. Allow to cool completely before slicing.
  4. Dust with powdered sugar and garnish with fresh lemon zest.
