These homemade peach cookies are a soft, chewy treat that capture the essence of summer with their sweet, fruity flavor.
Ingredients
- 2 cups All-purpose flour
- 1 teaspoon Baking soda
- 1/2 teaspoon Salt
- 1/2 cup Butter, softened
- 1 cup Granulated sugar
- 1 Egg
- 1 teaspoon Vanilla extract
- 1 to 1.5 cups Diced peaches
- 1/2 teaspoon Ground cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, baking soda, and salt in a medium bowl. Set aside.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add in the egg and vanilla extract to the butter mixture, mixing until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
- Fold in the diced peaches and cinnamon if using.
- Drop tablespoonfuls of dough onto a parchment-lined baking sheet, spacing them a couple of inches apart.
- Bake for 12-15 minutes, or until the edges are golden brown. Allow to cool for 5 minutes before transferring to a wire rack.
Notes
Choose ripe peaches for the best flavor. If desired, chill the dough for 30 minutes to enhance texture.
