Description

Delightful cherry pie bars with a buttery crust and a sweet and tangy filling, perfect for sharing at gatherings.


Ingredients

  • 2 cups All-purpose flour
  • 1 cup Unsalted butter, softened (2 sticks)
  • 1/2 cup Granulated sugar
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 2 cups Fresh or frozen cherries, pitted
  • 1/2 cup Granulated sugar (adjust to taste)
  • 2 tablespoons Cornstarch
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Almond extract (optional)
  • 1/2 cup Rolled oats
  • 1/4 cup Brown sugar
  • 1/4 cup All-purpose flour
  • 1/4 teaspoon Cinnamon
  • 1/4 cup Butter, melted


Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, mix the flour, softened butter, sugar, salt, and vanilla extract until crumbly. Press half of this mixture into a greased 9×13 inch baking dish to form the base.
  2. Combine pitted cherries, additional sugar, cornstarch, lemon juice, and almond extract (if using) in another bowl. Stir gently to coat the cherries evenly. Spread this cherry mixture over the crust in the baking dish.
  3. Mix the oats, brown sugar, additional flour, cinnamon, and melted butter in the same bowl used for the base. Sprinkle this mixture evenly over the cherry filling.
  4. Bake in the preheated oven for about 35-40 minutes or until the top is golden and the cherry filling is bubbling. Allow to cool before cutting into bars.

Notes

Use fresh cherries for the best flavor, but frozen can work too. Let the bars cool before cutting for easier handling.
