Description

A delightful dessert combining sweet and tart cherry flavors with a buttery, crumbly crust.


Ingredients

  • 2 cups All-purpose flour
  • 1 cup Unsalted butter, softened
  • 1/2 cup Granulated sugar
  • 1/2 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 2 cups Fresh or frozen cherries, pitted
  • 1/2 cup Granulated sugar (for filling)
  • 2 tablespoons Cornstarch
  • 1 tablespoon Lemon juice
  • 1/2 teaspoon Almond extract (optional)
  • 1/2 cup Rolled oats
  • 1/4 cup Brown sugar
  • 1/4 cup All-purpose flour (for topping)
  • 1/4 teaspoon Cinnamon
  • 1/4 cup Melted butter


Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, mix 2 cups of flour, 1 cup softened butter, 1/2 cup sugar, 1/2 teaspoon salt, and 1 teaspoon vanilla extract until crumbly. Press half of this mixture into a greased 9×13 inch baking dish to form the base.
  2. Combine in another bowl, 2 cups pitted cherries, 1/2 cup additional sugar, 2 tablespoons cornstarch, 1 tablespoon lemon juice, and 1/2 teaspoon almond extract (if using). Stir gently to coat the cherries and spread this mixture over the crust.
  3. Mix in the same bowl used for the crust, 1/2 cup rolled oats, 1/4 cup brown sugar, 1/4 cup flour, and 1/4 teaspoon cinnamon with 1/4 cup melted butter. Sprinkle this mixture over the cherry filling.
  4. Bake for about 35-40 minutes or until the top is golden and the filling is bubbling. Allow to cool before cutting into bars.

Notes

Choose ripe, fresh cherries for the best flavor, but frozen cherries also work well. Let the bars cool completely before cutting to set the filling correctly.
