Delightful homemade blueberry scones with a buttery, flaky texture and bursts of sweet blueberries, perfect for breakfast or a snack.
Ingredients
- 2 cups All-purpose flour
- 1/2 cup Granulated sugar
- 1 tablespoon Baking powder
- 1/2 teaspoon Salt
- 1/2 cup Unsalted butter, cold and cubed
- 1 cup Fresh blueberries
- 1/2 cup Heavy cream
- 1 Large egg
- 1 teaspoon Vanilla extract
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Combine the flour, sugar, baking powder, and salt in a large bowl and mix well.
- Cut the cold, cubed butter into the flour mixture until it resembles coarse crumbs.
- Fold in the fresh blueberries gently.
- Whisk together the heavy cream, egg, and vanilla extract in a separate bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Turn the dough onto a floured surface, pat it into a circle about 1 inch thick.
- Cut the dough into wedges and place them on the prepared baking sheet.
- Bake for 15-20 minutes or until golden brown on top.
- Let them cool slightly before serving warm.
Notes
Serve with jam, clotted cream, or a dusting of powdered sugar. Great for breakfast, brunch, or as a snack.
