Description

Ingredients

  • 4 Boneless, skinless chicken breasts
  • 1/4 cup Olive oil
  • Juice of 2 lemons
  • 3 cloves Garlic, minced
  • 2 teaspoons Dried oregano
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 cup Cooked quinoa or rice
  • 1 cup Cherry tomatoes, halved
  • 1 Cucumber, diced
  • 1 Red onion, sliced
  • 1 cup Feta cheese, crumbled
  • 1/4 cup Fresh parsley, chopped
  • Tzatziki sauce to taste


Instructions

  1. Marinate the chicken: In a bowl, mix olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper. Add the chicken breasts and let them marinate for at least 30 minutes, or up to 4 hours in the fridge for maximum flavor.
