Ingredients
- 2 cups Fresh ripe peaches, sliced
- 1 tablespoon Lemon juice
- 1/4 cup Sugar
- 1 teaspoon Cinnamon
- 1 tablespoon Cornstarch
- 1 Pre-made pie crust
- 1 Egg (for egg wash)
- 1 tablespoon Butter, diced
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss the sliced peaches with lemon juice, sugar, cinnamon, and cornstarch.
- Roll out the pie crust on a baking sheet lined with parchment paper.
- Spoon the peach mixture into the center of the crust, leaving a border.
- Fold the edges of the crust over the filling, pleating as necessary.
- Brush the crust with a beaten egg and sprinkle with extra sugar if desired.
- Dot the filling with diced butter.
- Bake for 25-30 minutes until the crust is golden and the filling is bubbly.
- Allow to cool slightly before serving.
Notes
Serve warm with vanilla ice cream or whipped cream. Can also be delightful at room temperature.
