Ingredients
- 4-5 Ripe peaches, sliced
- 1 tablespoon Sugar
- 1 teaspoon Vanilla extract
- 1 tablespoon Lemon juice
- 1 Pre-made pie crust or puff pastry
- 1 Egg (for egg wash)
- 1 tablespoon Butter, cut into small pieces
- Pinch of salt
Instructions
- Preheat the oven to 400°F (200°C).
- Combine the sliced peaches, sugar, vanilla extract, lemon juice, and a pinch of salt in a mixing bowl. Stir gently and let sit for 10-15 minutes.
- Roll out the pie crust or puff pastry on a baking sheet lined with parchment paper.
- Place the peach mixture in the center of the crust, leaving a 2-inch border.
- Fold the edges of the crust over the peaches, pleating as necessary.
- Brush the crust with beaten egg and dot the peaches with small pieces of butter.
- Bake for 25-30 minutes or until the crust is golden brown and the peaches are tender.
- Allow to cool slightly before serving warm or at room temperature.
