A delicious crispy smash burger featuring lacy edges and a unique secret sauce, perfect for casual family dinners or barbecues.
Ingredients
- 1 lb (450g) Ground Chuck, kept cold
- 4 slices Yellow American Cheese, for the perfect melt
- 2 Brioche Buns, glossy and golden
- 2 tbsp (30g) Unsalted Butter, for toasting
- 1/2 tsp Kosher Salt, to taste
- 1/4 tsp Black Pepper, freshly cracked
- 1/2 cup (120ml) Mayonnaise
- 2 tbsp (30ml) Ketchup
- 1 tbsp (15ml) Yellow Mustard
- 1/4 White Onion, finely diced
- 6 slices Dill Pickles, thinly sliced
Instructions
- Prepare the patties: Take your ground chuck and divide it into equal-sized portions (about 4 ounces each). Do not overhandle the meat; keeping it cold helps maintain a juicy patty.
- Heat the skillet: Preheat a cast-iron skillet or griddle over medium-high heat. A hot surface is key to achieving that crispy crust.
- Smash the patties: Place the meat balls onto the hot skillet and immediately press down with a spatula to create a flat patty. This ‘smashing’ technique helps create those delicious lacy edges. Cook for about 2-3 minutes.
- Season and flip: After a few minutes, sprinkle salt and pepper on the patty. Once browned, flip it over and immediately place a slice of yellow American cheese on top to melt.
- Toast the buns: While the cheese melts, spread butter on the inside of the brioche buns. Toast them on the skillet until golden and crispy.
- Assemble: Spread the secret sauce (mix mayo, ketchup, mustard, and onion) onto the bottom bun, layer on the crispy patty, add dill pickles, and top with the other half of the bun.
Notes
For a vegan option, substitute mayonnaise with a vegan alternative. Feel free to experiment with different cheeses or buns.
