Description

A flavor-packed, quick, and delicious pasta dish featuring juicy chicken, colorful vegetables, and a rich creamy sauce with a delightful Cajun kick.

Ingredients

  • 8 ounces pasta (preferably fettuccine or penne)
  • 1 pound chicken breast (diced)
  • 2 tablespoons olive oil
  • 1 cup bell peppers (chopped, mix colors)
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 2 tablespoons Cajun seasoning (adjust to taste)
  • 1 cup heavy cream
  • ½ cup Parmesan cheese (grated)
  • Salt and pepper to taste
  • Optional: chopped parsley (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add diced chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Toss in the chopped bell peppers, diced onion, and minced garlic. Sauté for another 3-4 minutes until the vegetables are tender and fragrant.
  4. Sprinkle in Cajun seasoning, mixing well to ensure everything is coated. Cook for an additional minute to release the spices’ flavors.
  5. Add heavy cream to the skillet, stirring gently to combine. Let it simmer for about 3-4 minutes until the sauce thickens slightly.
  6. Stir in grated Parmesan cheese until melted. Season with salt and pepper to taste.
  7. Add the cooked pasta to the skillet and toss together until well coated. Cook for another minute until heated through.
  8. Remove from heat and serve immediately, topped with chopped parsley.

Notes

For a vegan version, substitute chicken with chickpeas or tofu and use coconut cream instead of heavy cream. Feel free to mix in extra vegetables like spinach or mushrooms for more nutrition.
