A delightful combination of carrot and chickpea balls enveloped in a creamy coconut curry sauce, rich yet refreshing, perfect for any meal.
Ingredients
- 2 cups grated carrots
- 1 can chickpeas, drained and rinsed
- 1 cup breadcrumbs
- 1/2 cup chopped green onions
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt and pepper to taste
- 1 can coconut milk
- 2 tablespoons curry powder
- 1 tablespoon olive oil
- Fresh cilantro for garnish
Instructions
- Mash the chickpeas in a bowl and mix in the grated carrots, breadcrumbs, green onions, garlic, cumin, coriander, salt, and pepper.
- Form the mixture into small balls and fry them in a pan with olive oil until golden brown.
- Heat the coconut milk in another pan and stir in the curry powder.
- Add the fried chickpea balls to the curry sauce and let simmer for 10-15 minutes.
- Serve hot, garnished with fresh cilantro.
Notes
For added spice, consider adding a pinch of red pepper flakes or a diced chili. Adjust seasoning to taste before frying.
