Description

A delightful Blueberry Ricotta Galette bursting with fresh flavors and a beautiful rustic presentation, perfect for breakfast or dessert.


Ingredients

  • 1 1/4 cups All-purpose flour
  • 1/4 tsp Salt
  • 8 tbsp Unsalted butter (chilled and cubed)
  • 3-4 tbsp Ice water
  • 1 tbsp Granulated sugar (optional)
  • 1 cup Ricotta cheese
  • 1 1/2 cups Fresh blueberries
  • 2 tbsp Honey
  • 1 tbsp Fresh thyme leaves (finely chopped)
  • 1 tsp Lemon zest
  • 1 tsp Vanilla extract
  • 1 tbsp Cornstarch
  • 1 Egg (beaten for egg wash)
  • 1 tbsp Coarse sugar (for sprinkling)


Instructions

  1. In a large bowl, combine the flour, sugar (if using), and salt. Add the chilled, cubed butter and use a pastry blender or your fingers to work the butter into the flour until the mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, mixing until the dough just comes together. Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  2. In a medium bowl, mix the ricotta cheese with honey, lemon zest, vanilla extract, and chopped thyme. Stir in cornstarch gently to help thicken the filling as it bakes.
  3. Preheat your oven to 375°F. On a floured surface, roll out the chilled dough into a rough 12-inch circle. Transfer the dough to a parchment-lined baking sheet. Spread the ricotta filling evenly in the center, leaving a 2-inch border. Sprinkle the blueberries on top of the ricotta.
  4. Carefully fold the edges of the dough over the filling, pleating as needed to create a rustic crust. Brush the crust with beaten egg and sprinkle coarse sugar on top for a golden, crunchy finish.
  5. Bake the galette for about 40-45 minutes or until the crust is golden brown and the filling is bubbly. Let it cool for 10-15 minutes before slicing to allow the filling to set.

Notes

Chilling the butter helps to create a flaky crust. Use fresh blueberries for better flavor. You can substitute thyme with mint or basil for a unique flavor twist.
