Ingredients

  • Puff pastry (thawed) – 1 package
  • Fresh blueberries – 2 cups
  • Granulated sugar – 1/4 cup
  • Cornstarch – 1 tablespoon
  • Lemon juice – 1 tablespoon
  • Beaten egg (for egg wash) – 1
  • Powdered sugar (for dusting) – to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine blueberries, granulated sugar, cornstarch, and lemon juice in a bowl. Let it sit for a few minutes.
  3. Roll out the puff pastry on a floured surface and cut it into squares.
  4. Place a spoonful of the blueberry mixture in the center of each square.
  5. Fold the pastry over to form a triangle or rectangle, sealing the edges with a fork.
  6. Brush the tops with beaten egg.
  7. Bake for 15-20 minutes or until golden brown.
  8. Let them cool slightly, then dust with powdered sugar before serving.
