Ingredients

  • 1 cup cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup fresh blueberries
  • 1/4 cup milk


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. Beat together the cream cheese and butter until smooth.
  3. Add the sugar and continue to beat until light and fluffy.
  4. Mix in the eggs, one at a time, then stir in the vanilla extract.
  5. Whisk together the flour, baking powder, baking soda, and salt in another bowl.
  6. Gradually blend the dry ingredients into the cream cheese mixture alternately with the milk.
  7. Fold in the blueberries gently.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Ensure cream cheese and butter are at room temperature for easier mixing. For variation, you can substitute blueberries with other fruits.
